Directions
- Preheat the oven: Heat to 220°C (425°F) and line a baking sheet with parchment paper.
- Prepare the apple filling: In a small bowl, combine diced apples, sugar, cinnamon, nutmeg (if using), and lemon juice. Toss until evenly coated.
- Make the biscuit dough: In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add buttermilk: Pour in the buttermilk and stir until a soft dough forms. Do not overmix.
- Shape the biscuits: Turn the dough onto a lightly floured surface. Roll or pat it out to about 1–1.5 cm (½ inch) thick. Use a biscuit cutter or glass to cut out rounds.
- Assemble the biscuits: Spoon a small amount of apple filling onto the center of half of the biscuit rounds. Top each with another biscuit round and gently press the edges to seal.
- Add optional topping: Brush the tops with melted butter and sprinkle with cinnamon sugar if desired.
- Bake: Arrange the biscuits on the prepared baking sheet and bake for 15–18 minutes, until golden brown.
- Cool and serve: Let cool slightly before serving warm. Enjoy plain or with a drizzle of honey or cream.
