Directions

  1. Preheat the oven: Heat to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Prepare the apple filling: In a small bowl, combine diced apples, sugar, cinnamon, nutmeg (if using), and lemon juice. Toss until evenly coated.
  3. Make the biscuit dough: In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Add buttermilk: Pour in the buttermilk and stir until a soft dough forms. Do not overmix.
  5. Shape the biscuits: Turn the dough onto a lightly floured surface. Roll or pat it out to about 1–1.5 cm (½ inch) thick. Use a biscuit cutter or glass to cut out rounds.
  6. Assemble the biscuits: Spoon a small amount of apple filling onto the center of half of the biscuit rounds. Top each with another biscuit round and gently press the edges to seal.
  7. Add optional topping: Brush the tops with melted butter and sprinkle with cinnamon sugar if desired.
  8. Bake: Arrange the biscuits on the prepared baking sheet and bake for 15–18 minutes, until golden brown.
  9. Cool and serve: Let cool slightly before serving warm. Enjoy plain or with a drizzle of honey or cream.
