Step 1: Roast the Sweet Potatoes
Preheat the oven to 400°F (200°C). Pierce each sweet potato a few times with a fork. Place on a baking sheet and roast for 45–55 minutes, until tender and caramelized.
Step 2: Prepare the Apple Mixture
In a skillet over medium heat, melt the butter. Add diced apples and cook 5–7 minutes until softened. Stir in maple syrup, cinnamon, nutmeg, cloves, and salt, cooking for 2 more minutes until fragrant.
Step 3: Stuff the Sweet Potatoes
Let roasted sweet potatoes cool slightly. Slice open the center, fluff the flesh with a fork, and spoon in the spiced apple mixture.
Step 4: Add Toppings & Serve
Sprinkle with chopped pecans and dried cranberries. Top with a dollop of Greek yogurt or whipped cream if desired. Serve warm.
