Directions

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper for easy cleanup and better crisping.
  2. Wash and peel the potatoes if desired, then cut them into even sticks, about 1 cm (½ inch) thick. Uniform size ensures they cook evenly.
  3. Place the potato sticks in a large bowl and rinse with cold water to remove excess starch, then pat them dry thoroughly.
  4. Drizzle the olive oil over the potatoes and sprinkle with salt, black pepper, garlic powder, and smoked paprika if using. Toss well until each piece is evenly coated.
  5. Spread the fries in a single layer on the prepared baking sheet, leaving space between each piece so they crisp rather than steam.
  6. Bake for 25 minutes, then flip the fries with a spatula. Continue baking for an additional 15–20 minutes, or until golden brown and crispy to your liking.
  7. Remove from the oven and transfer to a serving platter. Garnish with freshly chopped parsley if desired, and serve immediately for the best crunch.
