Instructions
Step 1: Preheat and Prep
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil. Pat chicken drumsticks dry with a paper towel for extra crispiness.
Step 2: Season the Chicken
In a large bowl, combine olive oil, garlic powder, smoked paprika, thyme, salt, and black pepper. Toss the drumsticks in the mixture until evenly coated.
Step 3: Prepare the Potatoes
In the same bowl, toss the potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them around the chicken on the baking sheet.
Step 4: Bake to Golden Perfection
Bake for 35–45 minutes, turning the chicken and potatoes halfway through. The chicken should reach an internal temperature of 165°F (74°C), with a golden-brown, crispy skin. Potatoes should be tender on the inside and crisp on the outside.
Step 5: Serve
Transfer to a serving platter. Sprinkle with chopped parsley and serve with lemon wedges if desired. Enjoy warm!
